It’s that time of year again. Easter is over, and you have a refrigerator full of leftover hard boiled eggs. The kids begged and begged to dye more eggs, and now there are three egg cartons sitting in your refrigerator. What are you going to do with all those eggs? 1. Egg Salad Sandwiches
Egg salad is one of my favorite ways to enjoy leftover hard boiled eggs. Just cut the eggs and mix them with a little mayo, salt, and pepper, and you’re good to go. I do like to add a little bit of ground mustard or a little bit of dill for some extra flavor. No matter how you mix it up, egg salad is a quick and easy way to use up those extra eggs. You can even serve it on lettuce or crackers instead of bread. I love mine on Triscuits!
2. Deviled Eggs
I used to serve deviled eggs for Easter dinner, but now we go to my brother-in-law’s house. Since I miss my deviled eggs, I usually whip up a few for my family. Plus, it’s a great way to use up those leftover hard boiled eggs! Just peel your eggs and cut them in half lengthwise. Scoop out the yolks and put them in a bowl. Mix them together with some mayo, mustard, salt, and pepper, and put the mixture back in the egg whites. Sometimes I mix in a little sweet pickle relish. Yummy! Sprinkle the tops with some paprika, and you’re ready to serve them. My special deviled egg serving tray is another reason I have to make them each year.
3. Cobb Salad
Leftover hard boiled eggs are perfect for making Cobb Salad. This is one of my favorite types of salad. I use this recipe for Cobb Salad from All Recipes. The combination of ingredients is absolutely delicious! I love having this salad for lunch. I can make it ahead of time and just toss it with the dressing at work. The avocado is the only problem, since it oxidizes so quickly. I just take the whole avocado with me and cut it when I’m ready to eat.
4. Chicken Corn Soup
Okay, this one may seem a bit strange, but trust me. It’s absolutely delicious! My family went to a Pennsylvania Dutch restaurant for dinner a few years ago. There was a buffet, and I tried the chicken rivel soup. It was basically chicken noodle soup with a different type of noodle and hard boiled eggs. I fell in love with it and had 3 cups of it. After we left the restaurant, I couldn’t stop thinking about it. I searched online and found a recipe from All Recipes for Chicken Corn Soup that had the exact same ingredients. I made it, and it tasted exactly like the one at the restaurant. It takes a bit of time, since you have to wait for the chicken to cook, but it’s so worth it! I make a big batch and freeze some of it. That way I can have a cup (or three) whenever I have the craving.
5. Plain Egg Sandwich
Are you feeling exhausted from cooking Easter lunch? Then, this is just what you need! Take out a piece of bread and slather it with some mayo. Slice a hard boiled egg, and put it on the bread. Shake on some salt and pepper, and add some lettuce and tomato if you have the energy. Even though it’s very simple, this sandwich has a very special place in my heart. I spent every Easter at my grandparents’ house when I was growing up. My grandma made these sandwiches for dinner. After a busy day, they tasted so good. Even though I still really enjoy this sandwich, I just can’t get it quite as good as hers.
